Café Bruges: A Tiny Taste of Belgium

When Ross Morris, Omar Taghi, and Ryan Twigg first sampled the cuisine during a research trip in Belgium, they instantly realized just how well it would be accepted back in Pennsylvania.

"We enjoy unique experiences," Morris says about his team. They're all experienced foodies and, naturally, were distraught by the fact so many Carlisle restaurants offered the same sort of food. "So many restaurants offering the same thing. So Morris and his team decided to bring a taste of Belgium back to the States with Café Bruges.

"The cuisine can be best described as a cross between German and French," Morris explains. Some of Morris's favorites include traditional dishes like Moules Frites (mussels with French fries) and Carbonade Flamande, which Morris described as, "the best beef stew you will ever taste."

Café Bruges also serves Belgium ale. Belgium is known for its beers and breweries, but what exactly makes ale crafted in Belgium so tasty? "Most of what the Belgians make," says Morris, "are actually ales which are living in the bottle and improve with age. They have a wide range of taste profiles including sweet, sour, strong, light, funky?" and the list goes on. Café Bruges' staff is knowledgeable on the 120 Belgium brews served at any given time, and is well suited to help guests find the drink they're looking for.

Café Bruges is a little slice of Belgium in Carlisle, PA, and is a fresh break for any palette looking for something satisfying and unique. Morris and his team also own and operate 4 other restaurants in Carlisle: Piatto (Italian), Andalusia (Spanish), Helena's Chocolate Cafe and Creperie, and Taqueria Laurita (a Mexican food truck).
