Red Sky Cafe Delights With the Best of Outer Banks Cuisine

Central Pennsylvania may not have the sandy beaches and year-round warm climate that North Carolina does. But thanks to an enterprising chef, residents in the Camp Hill area can at least experience the best food the southern state has to offer via the Red Sky Cafe. Owned and operated by self-taught chef Wes Stepp, Red Sky Cafe has been making a big splash with Pennsylvania diners since opening in April 2017 with what is known as Outer Banks cuisine.

"We opened to serve the (Ever Grain) brewery in November of 2016," Stepp said. "The café opened April 12, 2017. A friend of mine had asked me to do a consulting job in PA; he's a big fan of my location in Duck, NC. After going over my ideas of what he should do, he asked me to open up a restaurant up here in PA."

The restaurant's menu puts a focus on fresh seafood dishes, BBQ, tacos, and traditional appetizers such as chicken wings, bacon-wrapped scallops, and macaroni and cheese.

"Our Outer Banks cuisine is seafood, but the most central part is freshness," Stepp said. "It's inspired by the season, not only off of the coast of NC. Because of the amount of visitors from all over the world that come to the Outer Banks, the food must satisfy our vast array of clientele."

While Red Sky Cafe serves a variety of cocktails and other beverages, it's a BYOB establishment and provides herbs and produce at its own mixer bar to allow patrons to create their own concoctions. They may also grab a beer from the Ever Grain brewery next door and bring it into the restaurant.

Red Sky also offers catering services for any size event including wedding receptions, corporate gatherings, private parties, and more. Catering packages are available in several options and menus to fit every budget and client needs. The restaurant also offers personal chef services. The catering team has been awarded WeddingWire's Couple's Choice award for several years in a row.

Stepp is also the creator of his own diet and nutrition program, Tastefully Fit. Inspired by his years as a pro-level bodybuilder, the food plans revolves around five to six smaller meals per day that are designed to be satisfying and packed with nutrients. Stepp maintains that clients will never starve using the plan, and is available to give presentations about the Tastefully Fit program at a private residence, company, or other location. As far as his favorite Red Sky Cafe dishes, Stepp's answer came quickly.

"Shrimp N' Grits; fresh shrimp, pan sautéed, fire roasted tomato cream sauce served atop 'Redneck Risotto' (Asiago cheese grits) and the blue cheese encrusted beef tenderloin, those are my top two," he said. "But, there are the daily features of the day that always amaze me as they allow the creativity of the chefs to shine."
