The Happy Mixer Is Making Gluten Free Baked Goods Delightful For All Customers

By Pamela Sosnowski

Tim Mourer knows from personal experience that everyone on a gluten free diet is worthy of enjoying the same baked treats as those without dietary requirements. After all, Mourer has gluten sensitivity as well and ironically, was running his own bakery at the time he began eliminating gluten from his diet.

After turning away numerous customers asking for gluten free treats, Mourer decided he'd had enough of feeling his customers' pain. He and his wife opened The Happy Mixer in 2013 in Chalfont, which has since been named the "#1 Gluten Free Bakery in Pennsylvania."

"After several years without being able to eat any of my own baked goods, I decided to sell the bakery back to the family I grew up working with for nearly 14 years in 2012," he recalled. "My goal was to provide an 'old fashioned bakery experience' for the gluten free community, where everyone could safely enjoy some of life's simplest pleasures."

The bakery has since opened two additional locations, in Newtown and New Hope. Mourer and his staff make all of the goods from scratch every morning (without high fructose corn syrup or trans fats) and usually throughout the day as well to ensure the stock is always fresh. At any of the locations, customers will find an assortment of pies, doughnuts, breads, cakes, cookies, brownies, and kiffles, a Hungarian cookie made from cream cheese-based dough and filled with jam. While every single ingredient is gluten free, the secret to every item's exceptional taste and texture is what Mourer calls his "top secret custom flour blend."

"I personally mix every batch of gluten free flour that we use for each of our locations," he stated. "The flour blend is the foundation that helps us overcome the texture and consistency issues many gluten free baked goods have had in the past."

Not only is every ingredient used at the bakery gluten free, but Mourer has a rule that no employee may bring in or eat any food containing gluten, to ensure there's no chance of contamination. All of the baking equipment used has never touched a gluten ingredient. Additionally, the bakery offers several dairy-free and vegan items including cakes, cookies, and muffins.

The Happy Mixer's cake specialist is available to fulfill orders for custom cakes for special occasions such as birthdays and weddings. Mourer recommends making an appointment one to three months in advance to ensure all of the details can be arranged. Cake flavors include vanilla, chocolate, and red velvet, and pound cakes in pumpkin and lemon.

The bakery's locations are open seven days a week, and customers will also find their items for sale at local grocers including Henning's Market and Landis Supermarket. The Happy Mixer also ships a selection of its baked goods throughout the U.S. All products are best when consumed fresh, but may be frozen for up to two months.

For those with Celiac disease and gluten sensitivity, and even to those without dietary restrictions, The Happy Mixer is a friendly bakery with something to delight everyone's palate.

"We pride ourselves on having premium baked goods that everyone will truly enjoy," Mourer said. "Whether you are gluten free or just someone who wants to indulge in a delicious, fresh baked good, our bakery is a true experience."
